My last day at work …

Yesterday was my last day at work for my nursing job. I have come to love my Saturday’s working there, the pay is great & the ladies I work with are simply the best. I could have kept working  a lot longer obviously but I think it is a bit upsetting to some of the patients to see me waddling around like a duck on heat in my now obvious pregnant state. I won’t say where I work because it clearly may offend some but let’s just say I will miss it dearly and 29 weeks was an appropriate time to leave. I was very spoilt to get a day spa voucher from everyone there, which I will use for a pregnancy massage next month, so lucky! I will definitely return there early next year after maternity leave.

I made some of my coconut macaroons to take in for morning tea …

They are delicious and so easy & quick to make. Everyone always asks for the recipe so here it is if anyone wants to try it:
  • 3 large egg whites
  • pinch cream of tartar
  • pinch salt
  • 1 tsp vanilla extract
  • 30gm ground almond meal
  • 100gm caster sugar
  • 250gm shredded coconut
  1. Preheat oven 160 C
  2. Use electric mixer to beat egg whites until soft peaks firm
  3. Add pinch cream of tartar, beat through
  4. Add caster sugar 1 spoonful at a time whilst beating until firm hard peaks form
  5. Fold through pinch salt, vanilla extract & almond meal
  6. Fold through shredded coconut
  7. Use a teaspoon and form small balls on lined baking trays
  8. Bake for approx 10 mins until golden brown
  9. Allow to cool, join two macaroons together with a layer of good raspberry jam
  10. Dust with icing sugar to serve.
My kids are at their dad’s this weekend so it’s just me & Hippy Brad. Today we woke up at went for a 45min walk before the weather got too hot and then came home and cleaned the house from top to bottom for 3 hours. We have been doing this every Sunday lately, it’s becoming a ritual and even though we both hate doing it, the house looks wonderful. I agree with the theory a well looked after home is a loved home & everyone is happier.
And now it’s lunchtime and Hippy Brad is cooking me a lemon & coriander vegetable stir fry …
He is simply the best! I love him xx

    what state are you in? I’m in California and my indurance with Kaiser won’t let me take off until my 36th week and I’m only allowed 6 months off. I’m so reasy to start maternity leave, lucky you. 🙂

    Hi there!
    I’m in Australia so i don’t quite understand the US insurance system 🙁 I am just casual at work though, so now i have stopped I don’t get paid sadly 🙁
