Rainbow cupcake recipe with rainbow frosting

Every school holidays the girls want to take over my kitchen and bake until midnight. So many mums love doing this stuff with their kids, I am not one of them. The kitchen is MINE, it’s my happy place, my sanctuary and quite often, my only me time. But every now and then I relinquish control and let them cook. 
Tip: Pour a big glass of wine approx 30 minutes before they enter the kitchen and then usually a good time is had by all. 
These Rainbow Cupcakes turned out just fabulous so I thought I would share our recipe. 

First you need to whip up a batch of vanilla cupcake batter. 

  • 4 eggs
  • 200 gm softened butter
  • 1 and 1/3 cup caster sugar
  • 2 and 3/4 cup self raising flour
  • 1 tsp vanilla extract
  • 1 cup milk


  • Preheat oven 180C
  • Prepare 12 muffin cases (I used a non stick muffin tray)
  • Cream butter, sugar and vanilla extract with electric mixer.
  • Add eggs one at a time and mix.
  • Add flour and milk in batches and mix until just combined.

Separate batter into individual bowls.

Choose your 6 colours and add a couple of drops of colour/gel to each bowl, stir.

I use Wilton food colours/gels.

Put a teaspoon of each coloured batter in each muffin case. 
Try and spread each layer out without disturbing the bottom layer too much. 
Doesn’t need to be perfect. 
Bake for approx 20 minutes or until cooked through.
Allow to cool on wire rack whilst you prepare the frosting. 
Pour another glass of wine first.

Rainbow Frosting 

  • 100gm softened butter
  • 3 cups icing sugar
  • 1/2 cup milk

  • Using electric mixer, beat butter until pale.
  • Gradually add the icing sugar whilst beating.
  • Add milk and beat until all combined.

Separate into individual bowls and colour as you like. 
Icing will be thick but don’t be tempted to add more milk as you won’t be able to pipe it.

Put frosting into sandwich bags and seal tightly.
Cut the corner of each bag and layer all 3 bags into a piping bag with a star nozzle.
Squish it all down and you are now ready to pipe. 

Make a joke about it looking like unicorn poo because you’re a super cool mum.
