I have chosen to live a mostly dairy free existence for as long as I can remember for simple reasons:

  • Consuming dairy products gives me stomach cramps and pain as I have a  general intolerance to these foods. 
My Mum tells me I refused to eat most dairy products when I was a toddler. And yes this means I don’t eat cheese, yoghurt, ice cream or drink plain milk. I can tolerate a dash of milk in my coffee but that’s about it. I did however always cook and bake with cow’s milk until I started experimenting with alternatives a couple of years ago.
I have never looked back, and now the majority of my recipes are dairy free

Why should you avoid Soy Isolate Protein (SPI)?

SPI is derived from chemically stripping soybeans, which are also usually genetically modified. Be careful when buying cheaper protein powders and always check the ingredients to ensure that the product does not contain SPI. It is basically a more artificial product and I don’t believe that it is the most ideal thing to put into your body. On the other hand, another great reason why you should choose Vitasoy’s organic range in your daily diet, is that it is organic, and only uses whole soybeans instead of SPI.

It is incredibly simple and easy to introduce soymilk to your everyday lifestyle and cooking. I’ve even switched to soymilk in my morning coffee and discovered it makes a pretty delicious Soy Latte.

Easy Overnight Oats Recipes

Base Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup Vitasoy soymilk
  • 1/2 tablespoon of chia seeds
  • 1/4 cup of yoghurt*

* I don’t add the yoghurt to mine, but HB and Maggie love it in theirs. 

Method

  1. Add these base ingredients to a container or mason jar.
  2. Add your favourite flavour combinations.
  3. Stir or shake well.
  4. Refrigerate overnight.
  5. Top with fruit, nuts the next morning and EAT.
These are a few of our favourite flavour combinations …
Honey & Cinnamon Crunch
  • Add 1 tablespoon of raw organic honey and a teaspoon of cinnamon to base ingredients.
  • Top with sliced banana and some chopped pecans in the morning.
Chocolate & Peanut Butter Indulgence
  • Add 1 tablespoon each of organic cacao powder and peanut butter to base ingredients.
  • Top with blueberries and sprinkle with some raw cacao nibs or grated dark chocolate in the morning
Raspberry Delight
  • Add 1 tablespoon of raspberry jam to base ingredients.
  • Top with fresh or frozen raspberries the next morning. 

As you can imagine the possibilities are endless, and the kids will love being involved with this too.

Chocolate Chia Pudding

Ingredients:

  • 2 cups of Vitasoy soymilk
  • 6 tablespoons of chia seeds
  • 3 tablespoons organic cacao powder
  • 2 tablespoons of organic coconut sugar
  • 1 tsp vanilla extract
  • Fresh or frozen raspberries for topping
  • Grated dark chocolate for garnish

Method

  1. Place all ingredients into a food processor or blender and mix until smooth.
  2. If you have a thermomix, mix for 1 minute on Speed 9.
  3. Pour mixture into a bowl, cover and pop into the fridge to chill for 3-4 hours.
  4. Top with raspberries and grated chocolate.
