Grain Free Date Loaf

Up until recently baking without gluten and sugar has been the pits. I adore all things coconut, but I just cannot bribe my taste buds to accept coconut flour as an acceptable substitute.

The girls have considered disowning me. I knew from the telling looks in their eyes that when I baked my last batch of revolting coconut flour brownies that I needed to come up with something pretty magical and quick!

One of the first things Annaliese asked me to cook when she moved up to Darwin earlier this year was my Thermomix Date Loaf. I knew if I could convert this winner of a recipe to be grain free without them knowing that I could redeem myself in the kitchen.

Hence, this delightful grain free date loaf was born. It is ideal for morning or afternoon tea and can even be sliced and toasted for a delicious Winter breakfast served with hot tea. 

I have tested it at least a dozen times just to be sure that it’s perfect and gained an extra few kilos in the process.

Now I’m back baking again I can honestly say that I prefer the Tefal Cuisine Companion over the Thermomix for mixing cake batters. It blends and mixes all the ingredients perfect every time with the touch of a button. 

I have included instructions for each machine below as well as the good ol’ fashion method.

Nitty Gritty: This date loaf is grain free, dairy free, gluten free and has no refined sugars. It is also Paleo friendly.

Ingredients
  1. 3 cups of almond meal
  2. 5 large free-range eggs
  3. 100gms medjool dates (pitted)
  4. 1/4 cup raw honey
  5. 1/4 cup melted organic coconut oil
  6. 1/4 cup organic coconut cream
  7. 1 tsp bi-carb
  8. 1 tsp cinnamon
  9. pinch fine sea salt
Topping*
  1. 1 tsp coconut sugar
  2. 1 tsp cinnamon
  3. *Combine topping ingredients in a small dish and set aside.
Traditional Method
  1. Pre-heat oven to 160 C and line a loaf tin with baking paper.
  2. Chop dates.
  3. Add wet ingredients and mix well.
  4. Add remaining sifted dry ingredients and combine.
  5. Pour into lined loaf tin and combine the topping ingredients and sprinkle over the top.
  6. Bake for 50-60 minutes or until skewer comes clean.
Cuisine Companion Instructions
  1. Pre-heat oven to 160 C and line a loaf tin with baking paper.
  2. Add pitted dates to CC bowl with the Ultrablade fitted and chop on Speed 11 for 20 seconds.
  3. Remove Ultrablade and replace with mixing blade.
  4. Add the rest of the ingredients and launch the P3 Pastry Program.
  5. Follow steps 5-6 above.
Thermomix Instructions
  1. Pre-heat oven to 160 C and line a loaf tin with baking paper.
  2. Place all ingredients into TM bowl and mix on Speed 7 for 20 seconds.
  3. Follow steps 5-6 of the Traditional Method above.
